Rosehill Sloe Gin
Autumn is the time to make Sloe Gin, Sloes are the fruit of the Blackthorn Bush, and are protected by long, lethal thorns. Undaunted by the thought of hidious injuries we sent Caitlin forth........and she duly returned (virtually unscathed) with 3 kg of plump sloes.
Recipe

450g Sloes
-
225g Castor Sugar
-
1 Litre Gin
-
Few drops Vanilla essence (optional).
Prick (or freeze overnight) the sloes, and combine them with the other ingredients in a sterile glass container
Shake daily for a week, then weekly for two months. Strain and bottle.
Drink....or if you can restrain yourself leave to mature for a few months
