Woodfired Sourdough Loaf

Sourdough bread tastes so much better than 'normal' bread, it lasts longer and makes amazing Toast. not everyone agrees but i like to rest my dough overnight in the fridge to develop the flavour.

Recipe

  • 500g Plain Flour

  • 350g Water (at  24 deg C)

  • 100g Sourdough Starter

  • 5g Dry Yeast

  • 10g Salt

Loosely combine Flour, Water, Sourdough starter and yeast in a bowl, Cover and leave for 20 mins before adding Salt. Knead for 10-12mins until elastic. Cover and rest overnight in fridge or for at least 2 hours in a warmish room. Shape on a floured surface then put in a mould (banetton) and cover and leave to develop for about 2 hours. Turn out onto a baking tray / Cloche / Dutch Oven - slash the surface and bake at 230 deg C for about 45- 50 mins
